Lemon Mascarpone Pancakes with Cream & Strawberries
Ingredients
Lemon Pancakes:
- 3 egg yolks
- 1 1/2 cup buttermilk
- 3 tablespoons sugar
- 1 cup mascarpone
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 lemons, zested
- 3 egg whites
Macerated Strawberries:
- 1 cup sugar
- 1 cup water
- 1 cup 7-up/sprite
- Strawberries – as needed (stem cut off and halved)
Directions
Lemon Pancakes:
1. Whisk together yolks, sugar, buttermilk and mascarpone.
2. In a separate bowl, mix flour, baking soda, lemon zest and baking powder.
3. Add dry mixture to wet and mix until well combined.
4. Whip egg whites until medium peak is achieved. Fold egg whites into batter.
5. Drop small dollops of batter onto a heated pan and make pancakes. Set aside.
Macerated Strawberries:
1. Bring sugar and water to a boil and allow to cool.
2. Add 7up/sprite to sugar water.
3. Soak strawberries in liquid for one hour.
